Finca Filadelfia was Antigua’s first coffee farm, founded in 1864 by Manuel Matheu, who borrowed the land to plant coffee after a failed cochineal business. His pioneering work helped establish the Antigua coffee region. Over generations, Filadelfia has become a symbol of Antigua’s rich coffee heritage, known for its sustainable practices and meticulous attention to quality.
Today, Marta Dalton, (Manuel's, great great great granddaughter) carries forward this legacy through her platform Coffee Bird, which emphasizes direct relationships, fair trade, and sustainable farming. Since leaving a career in finance in 2011, Marta has worked to connect farmers with roasters, shorten the supply chain, and ensure that quality coffee receives the recognition and reward it deserves.
Managed by her mother Colomba, Finca Filadelfia exemplifies this approach. Its volcanic soils, high-altitude climate, and careful cultivation produce coffees that are both technically precise and deeply expressive, all while sustaining the farm’s community and protecting Antigua’s coffee-growing heritage against demographic and economic pressures.

We're roasting this primarily for a balanced espresso, but it makes a delicious filter. Pushing for longer extraction times, or higher extraction methods will balance the sweet fruit with layers of brown sugar and milk chocolate.
