This Natural Geisha is a perfect representation of the varieties potential within the unique microclimate Ernesto has created under the forest canopy of Las Brumas. An incredibly sweet cup, with great depth of red and tropical fruit notes from the processing and a mouthfeel that is outstanding. 

Ernesto Menéndez is one of the most gifted and knowledgable producers I've ever met, and his passion for coffee, agriculture, and the environment he farms within are truly inspiring.

+ Broader Context 

 

Situated at the very top of the Santa Ana volcano, Las Brumas is the highest coffee farm in the region and the coffee trees have been planted within and under the natural forest ecosystem that Ernesto fell in love with. It's just one of the farms Neto owns alongside La Illusion, Alaska and Los Andes, each of which has placed first in the Cup of Excellence between 2007 and 2024. 

Las Brumas has a few varieties planted across the farm, with Pacamara and SL28 making up the majority and thriving well within the unique forest conditions, that allow a slow maturation and create incredibly sweet coffees, at the expense of higher yields. Neto deeply believes this trade-off is worthwhile both for the improved cup quality, and the longer sustainability of the trees and farm, where their planting is integrated in a regenerative cycle for soil fertility. 

The more limited quantity of geisha trees also perform well in these conditions, that closely reflect the varieties original home within the forests of Ethiopia, allowing their traditional fruit and floral flavour notes to shine, alongside a balance and depth resulting form the combination of the Salvadoran soil, and Ernesto's unique processing methods.

We're able to share Ernesto's beautiful coffees through our partnership with Steve and Joanna at Drop Coffee. Neto also produced the coffee with which Dale won the World Barista Championship in 2017, so being able to offer his coffees connects Ithaka with our past, and will be a bright part of our future.

While this coffee is going to please any geek as a pour-over, with a more refined natural sweetness than the boozy traits of the Los Andes Natural, or the Anaerobic Natural pacamara we're offering, it also makes a game-changing espresso, and if you have the tools to try both, I'd strongly recommend it!

This is a light to medium roast, and will benefit from longer extraction times in espresso to achieve balance, but a fairly standard 1;2 ratio yields great results.
