I've been enjoying Ernesto's experimental processes, since I first tasted his Alaska lots back in 2010. This coffee pushes my boundaries on the flavour impact of processing, but the undeniable sweetness, fruit forward first impressions and rich chocolate finish make it a coffee that has to be tasted to understand the possibilities.
After over 20 years of growing award winning coffees Neto is still curious, and driven to challenge himself and us with the potential to create a better cup.

Las Brumas has a few varieties planted across the farm, with Pacamara and SL28 making up the majority and thriving well within the unique forest conditions, that allow a slow maturation and create incredibly sweet coffees, at the expense of higher yields. Neto deeply believes this trade-off is worthwhile both for the improved cup quality, and the longer sustainability of the trees and farm, where their planting is integrated in a regenerative cycle for soil fertility.
Nearly 70 years ago, the previous owner of Las Brumas planted SL28 seeds, which had been collected on a hunting trip in Kenya. Over time they've adapted to the different growing conditions and terroir, but still present their trademark flavours. Today the SL28 is grown side by side with newer Pacamara trees. Ernesto's philosophy is to mix the two as they belong together and impact each other.
Las Brumas is the highest coffee farm on the Santa Ana volcano and the coffee trees have been planted within and under the natural forest ecosystem that Ernesto fell in love with. It's just one of the farms Neto owns alongside La Illusion, Alaska and Los Andes, each of which has placed first in the Cup of Excellence between 2007 and 2024.
We're able to share Ernesto's beautiful coffees through our partnership with Steve and Joanna at Drop Coffee. Neto and Las Brumas also produced the SL28 coffee with which Dale won the World Barista Championship in 2017, so being able to offer his coffees connects Ithaka with our past, and will be a bright part of our future.

This coffee will present well (and with consistent flavours) in any brewing method, but it will be a complex and intense espresso. Depending on your flavour preferences id be tempted to either run a much shorter or longer volume shot than a standard 1;2 ratio (Try 1;1.75, and 1:2.5 as starting points.
