Bolivia - Waliki

Pedro Rodriguez left a career in banking to focus on coffee full time, and now runs Agricafé together with his children, Daniela and Pedro Pablo, overseeing the whole chain from cultivation through milling and export. Waliki sits on volcanic soil in a cool, biodiverse stretch of the Andes and was designed from the start as an experimental site.

The farm also plays a role beyond its own harvest. It's a flagship property in Sol de la Mañana, the Rodriguez family's training initiative for smallholder farmers nationwide, covering skills like pruning and drying methods. Lessons learned at Waliki get passed on to that broader network, making the farm as much a demonstration site as a coffee source in its own right.

That work fits into a longer arc in Bolivian coffee history. Spanish colonists introduced the crop in the 1800s, but it remained a niche drink for the elite until commercial production took off in the 1920s. The real turning point came later, when land reform following the Bolivian revolution broke up large estates and redistributed small plots, typically 1 to 8 hectares, to indigenous growers. That change still shapes Bolivian coffee today, since family farms of that size produce most of the country's output. A later wave of international funding aimed at reducing coca cultivation briefly pushed coffee production to record highs, though a market downturn undid much of that growth. In response, the industry pivoted toward specialty coffee, a shift cemented when Bolivia held its first Cup of Excellence competition in 2004, an event that brought recognition to high altitude growing regions like Caranavi.

Waliki is Agricafé's first attempt at growing Typica and Java under fully organic management, and the team is still gathering data on how that choice affects yield, cost, and cup quality. Typica brings a long pedigree to the blend; it's one of the oldest coffee varieties still in cultivation. Tracing back through Yemen and Ethiopia, it contributes a clean, classic sweetness here. Java's history runs through the same region before Dutch traders carried it to Indonesia, and it's typically known for a thin, light body, which is exactly the trait Waliki's processing is built to counteract.

That's the real story behind the Pink Honey method. Anthocyanin, the pigment that gives blackberries, blueberries, and raspberries their colour, leaches out of the cherry during anaerobic fermentation and stains the mucilage a visible pink on the drying beds.

Agricafé built this process specifically to add weight and texture to Java's naturally light body. But the pigment does more than colour the beans; it shifts the microbial activity happening during fermentation, and because current thinking treats the earliest hours of raised-bed drying as effectively still part of fermentation, that pink stage carries real influence over the final cup, not just its appearance. What comes out the other side is a coffee with pronounced lactic acidity and a bright, fruit-forward sweetness, sitting underneath the floral, tea-like character the variety brings on its own.
